Spinach Salad with Marinated Mushrooms

1 pkg Baby Spinach
2 cups fresh, sliced mushrooms
11⁄2 cups Radishes, sliced thin
1 cup shredded carrots
1⁄2 cup crumbled feta or blue cheese
3⁄4 cup Hot Rod Bob’s Balsamic Italian Dressing


Place mushrooms in a separate bowl. Pour Balsamic Italian dressing over the mushrooms and toss gently. Cover and refrigerate for 2-3 hours. Just before serving, place spinach in a large serving bowl. Add sliced radishes, carrots, cheese and mushroom mixture. Toss until salad is well coated. Add a little more dressing if desired. Serves 6-8.


Summer Spinach Salad with Strawberries

6 cups Baby or Classic Spinach
1⁄2 package Sliced Mushrooms
1 cup pre-packaged cole slaw or shredded cabbage
2 cups fresh strawberries, sliced
1⁄2 cup feta cheese
1⁄2 cup sliced almonds
Hot Rod Bob’s Raspberry Dressing


Place salad ingredients in large serving bowl. Toss with raspberry vinaigrette dressing just before serving. Serves 4-6.


Sweet & Sassy Spinach Salad

1 pkg Classic or Baby Spinach
1⁄2 pkg. Fresh, Sliced Mushrooms, broken up
1 cup shredded carrots
1⁄2 cup crumbled feta cheese
1⁄4 cup diced red onion
1⁄4 cup Real bacon pieces, optional
1⁄2 cup flavored almonds
Hot Rod Bob’s – Suzie Q – Sweet & Sassy Dressing


Combine salad ingredients in large serving bowl. Toss with dressing just before serving. Serves 6-8.
